Ingredients

  • 3 lbs Pork Neck Bones

  • 1 can of tomato sauce

  • 1 can of crushed tomatoes

  • tomato paste

  • 2 yellow onions

  • 6 cloves of garlic

  • 1 tsp brown sugar

  • Fresh Basil

  • Oregano

  • Italian seasoning

  • Salt + Pepper

  • 1/2 cup water

  • 2 tsp olive oil

  • 1/2 tsp lemon juice

Preparation


Pork Bones in Red Sauce







Step One: In a large pot, add olive oil. When hot, add pork bones. Generously salt & pepper each side and sear.



Step Two: Once both sides are seared, remove pork bones and place on a plate to rest. In the same pot, add two small chopped yellow onions and 6 chopped garlic cloves. Cook until translucent. (It is important to use the same pot to absorb the flavor of the meat)




Step Three: Add in fresh basil and simmer.



Step Four: Put bones back into the pot. Add tomato sauce, crushed tomatoes, and 1/2 cup of water.



Step Five: Add tomato paste, herbs, & brown sugar and mix well. Bring the pot to a simmer and cook for about 10-15 minutes. After 15 minutes add lemon juice and stir.




Step Six: Cook covered on medium/low for around 3 hours or until the meat falls from the bone. Make sure to stir occasionally




Optional: halfway through the cooking process, add more fresh basil. Place over your favorite pasta for a complete meal
